Avocado Garlic Aioli

The simple touches can make a dinner special.  In the case of the Mexi-Turkey Burgers, the specialty came in the homemade flavors Aioli that topped the burger.  When enjoying the turkey burgers, this aoili replaced the creaminess of the traditional ketchup or mustard, while adding a freshness with garlic and lemon juice and just a small amount of heat with the cumin.

Smoked Rib & Baked Bean Quesadilla

I can only take credit for a portion of this recipe - and that portion is combining everything together.  The smoked ribs and baked beans were left overs from a fun-tastic family gathering this spring.  The food spread was amazing - it included the smoked ribs and baked beans, along with chips and dips, salads, corn on the cob, and of course - lots of laughter.

Homemade Iced Coffee

Summer is here!  I'm excited to say that cold foods are in...and basically, the only hot foods that are cooked during these three months involves the grill.  One day, browsing for cooling summer recipes, I came across this homemade iced coffee and felt perfect for those mornings that are quite warm and humid, giving you your coffee goodness with the chill that cools you on a hot morning.

Pesto Pasta with Chicken Sausage & Roasted Brussels Sprouts

It's no be surprise that if you have seen my blog before, that you know I'm a fan of Brussels Sprouts.  Finding something new to do with them is always a treat for me.  This recipe came together by the desire to try something new with a fresh flavor for summer that the pesto brings. 
The combination of the freshness of the pesto, the comfort of the pasta, the earthiness of the Brussels Sprouts and the texture and slight spice of the chicken sausage came together for a wonderful weeknight dinner.

When reading the name of this dish, you could probably guess exactly what is in it, but it was perfect Sunday breakfast.  Really what had happened was that we had left over cake when we first woke up, but then realized that later, we were still hungry and wanted something that would be real food, tasty and quick to throw together.

Grilled Cod with Citrus Browned Butter Sauce

This recipe is more about the sauce than the cod.  There isn't anything special to say about the seasoning on the cod, but the brush of canola oil and sprinkling of salt and pepper.   The winner of this is the sauce.  
This citrus browned butter sauce is fantastic with the richness of the browned butter, the sugary sweetness of the caramelized shallots and the freshness of the citrus.  I could easily see using this on chicken or pork, as well as the fish.  It was inspired by watching Bobby Flay on a Saturday morning and I can't tell you how easy it was since I didn't even need a grocery list to remember the ingredients.

Pineapple Avacado Salsa

You may start to see a theme right now in the recipes that I am posting.  That theme would be SPRING!!!  It is time for every last bit of snow to be gone and the outdoors to be nice and warm.  I want to sit on my patio with a glass of wine while my food is cooking on the grill.  I have started to hear birds chirping in the morning, so I feel like we are on the right path, but temps in the 30's (even if it is just first thing in the morning) have to go!

This was a fun recipe to make, that I am certain to make again this spring/summer.  The combo of creamy avocado, sweet pineapple, fresh lime juice and heat from the jalapeno makes winning combo that goes great over seasoned grilled chicken breast.  When I make this again, I want to see what else I could do with it - like turn it with some spinach and queso fresco for a nice salad, or maybe over grilled fish or maybe serve just as a stand alone salsa.  Can you tell that I like this salsa?!

The Best Easter Ham Ever!!!

Who is ready for Easter next weekend???  If you are not, here is something that can help and it's easy 

There has been one style ham that we have made in my family forever!  It has been made in the oven along with using a slow cooker.  I love the slow cooker style because then it frees up the oven for all the other fun things that accompany the ham. 

In my family, this ham is so good that it is staple not only at Easter, but also Christmas.  As you can see of the little bit of the tablecloth, it was Christmas that this picture was taken.  And the best part of this dish is that when you have gobbled up all of the ham, that bone makes a FANTASTIC broth for Split Pea Soup.  Happy Holidays everyone!

The Best Easter Ham Ever!!!


  • 1 bone in ham, precooked
  • 2-3 Tbls whole cloves
  • 3/4 - 1 cup brown sugar
  • 1 liter ginger ale
  • Place ham in slow cooker flat side down.  Push the whole cloves into the ham all over until all of them are used up.
  • Press the brown sugar onto the ham all over and then pour the ginger ale around the sides.
  • Cook per instructions, basting every 45 minutes to an hour.  Cook on low for 7-9 hours.

Cactus Juice

Closer to a decade ago, my cousin who has lived in Denmark my entire grown up life, came to the small town of T-hawk with his family (and pretty much the rest of our family) for the Fourth of July.  Besides all of the seriously fun times everyone had together, he also brought with him a cocktail that was perfect for a hot summer day or night. 
He used to make this at a tavern he had worked at many moons before and it is surprisingly smooth, even with the main ingredient of Tequila.

Cheesy Homemade Garlic Bread

Life moves really fast sometimes - where it becomes so easy for us to buy all of the pre-made frozen garlic bread and just cook that up whenever pasta is on the menu.  This recipe may take a few minutes longer than it's frozen counterpart, but it is super easy and definitely a fresher option.
The freshness of the French Bread and gooeyness of the melty cheese creates a winner side dish for any pasta dinner for everyone in the family - kids included.

Melted Chocolate Cake Decorations

It's the first year that the kid wanted me to make the birthday cake instead of buying it from Target or somewhere like that and I dove right in! 
Her biggest request is that she wanted some sort of awesome dance party kind of cake.  The big theme was blue, as you probably can see.  But the highlights where the rice krispy disco ball, the sugared stained glass dance floor and the Melted White Chocolate Decorations.  I can't forget to mention the home made butter cream frosting and edible blue spray paint.

Caramelized Onions

Absolutely love the sweet flavor that develops from cooking onions low and slow with salt, sugar and butter.  The caramelization gives the best onion flavor that can be used with anything.  It goes great on toast, pizzas, with beef, burgers, soups, salads, or if you are a true onion fan, straight out the jar.

Ginger Lime Martini

Growing up, my mom would make this Manicotti on special occasions.  We all loved this meal - wonderful flavors, very filling and great re-heated (if there are any leftovers).  I can still picture the large kitchen island and me and my brothers fighting over the spinning chair when waiting for dinner.  We had many meals around that island.

The best thing about this recipe that made it a family favorite is that the ingredients were all fairy common when on their own, but when combined, have a depth of flavor that appeases all parts of your pallet.  The creamy freshness of the spinach and cottage cheese, the heartiness from the ground beef mixed with the richness of the tomatoes, and finish that off with the cheesy goodness that every Wisconsinites meal needs - this is a masterpiece.
