Ginger Cookies


This recipe was a gift from my mom.  We went to visit over the holidays two years ago and these cookies were hard to resist.  They are soft and sweet, and the combination of ginger and molasses does something that makes them just unique enough that they will become a favorite in your home as well.

Summer Pasta Salad

This is a recipe that came not from entertaining others, but more in trying to find something different for lunches during the work week.  Believe it or not, I actually take frozen meals for lunch.  They are just easy, but I'm not really a fan of them.  My typical other options would be leftovers of last nights meal (but that doesn't happen too often because we typically finish what we make) or a peanut butter and jelly.

Sesame Honey Soy Chicken Breast

There isn't much to tell about this quick weeknight dinner.  Just four ingredients coming together to make your dinner an easy one.  I had made this with the Peanut Sauce and Soba noodles in the span of 30 minutes.  It is so rewarding to make a really satisfying meal in a short amount of time.

Grilled Stuffed Portobello Mushrooms

I don't know how many times I will say this throughout the life of this blog, but I LOVE GRILLING SEASON!!!  
It seems like every year I get really excited to grill and share - as evidenced by the Lamb Burgers, Vietnamese Shrimp Pops, Grilled Romaine Salad, Pineapple Salsa, Grilled Mozzarella Bread ...and so many more that are not yet created.  I have a feeling that every year as the snow melts and the world turns green, I will always shout the words - IT'S TIME TO GRILL!!!

You will all be getting this a little late, but this was our tribute to Cinco de Mayo at our house.  I made a poor attempt at homemade refried beans.  And by poor attempt, I really mean that they stunk.  The flavor was there, but I didn't get the right texture for this - so, what this means is that I will be trying them again.

Sauteed Brussel Sprouts

Growing up, my father had an amazing green thumb and we had what I believed to be the worlds largest home garden.  I'm sure it is not the largest personal garden in the world, but it was certainly admirable.  My dad grew the food, my mom canned and us kids just grabbed pea pods off the vine and carrots out of the ground to hose them off and have as a snack while we were running around.

Caprese Frittata

One thing that always happens when I visit my family is that we whip up great breakfasts on the weekends.  I mean all out kind of breakfasts that are awesome when feeding a large group of hungry people.  Pancakes with bacon, cream cheese or berry Kringle's, breakfast burritos, eggs - in many different ways - scrambled, Benedict, egg bake, and well, this list could go on and on.

White Wine Pear Sangria

I am a fan of wine...pretty much in all forms, except blush.  I like the light fruitiness of a savinogn blanc as much as I like the dark pepper cherry of a Zinfandel.  Which means, I also like it when we can have fun with wine and mix it up...in this case, making a sangria.
