Ginger Cookies

This recipe was a gift from my mom.  We went to visit over the holidays two years ago and these cookies were hard to resist.  They are soft and sweet, and the combination of ginger and molasses does something that makes them just unique enough that they will become a favorite in your home as well.

Go To Fresh Mozzarella Appetizer

I call this our Go To Mozzarella Appetizer/Snack because it is unbelievably easy to put together.  Using ingredients you have on hand to create yourself an quick and easy snack while dinner is baking or if friends come over unexpectedly.

Summer Pasta Salad

This is a recipe that came not from entertaining others, but more in trying to find something different for lunches during the work week.  Believe it or not, I actually take frozen meals for lunch.  They are just easy, but I'm not really a fan of them.  My typical other options would be leftovers of last nights meal (but that doesn't happen too often because we typically finish what we make) or a peanut butter and jelly.

Sesame Honey Soy Chicken Breast

There isn't much to tell about this quick weeknight dinner.  Just four ingredients coming together to make your dinner an easy one.  I had made this with the Peanut Sauce and Soba noodles in the span of 30 minutes.  It is so rewarding to make a really satisfying meal in a short amount of time.

Balsamic Reduction Sauce

It seems like there are many of those new concept specialty olive oil and balsamic vinegar stores popping up around the cities.  I am a big fan of both the oil and the vinegar and all they do for all different types of foods, so I find these shops quite exciting.

Peanut Sauce

This week is all about sauces and what you can do with them.  I thought it would be fun to showcase easy things to make that will allow different dinner options than your typical store bought sauces.  To be fair and completely honest, when I work all week and want food on the table before 8pm, sometimes store bought is the best way to go about getting that job done.

Watermelon Rum Punch

This memorial day weekend truly made everyone forget the last six months of snow and cold.  It went straight from bitter and unrelenting cold to 'hello summer!'  What better to ring in the wonderful weekend, but a refreshing watermelon punch...with just a touch of rum.

Grilled Stuffed Brussel Sprouts

Hint here - this recipe is not going to be much different than the Stuffed Mushrooms recipe.  Making this the same night gave me the same base stuffing for the ingredients, with very few adaptations.

Grilled Stuffed Portobello Mushrooms

I don't know how many times I will say this throughout the life of this blog, but I LOVE GRILLING SEASON!!!
It seems like every year I get really excited to grill and share - as evidenced by the Lamb Burgers, Vietnamese Shrimp Pops, Grilled Romaine Salad, Pineapple Salsa, Grilled Mozzarella Bread ...and so many more that are not yet created.  I have a feeling that every year as the snow melts and the world turns green, I will always shout the words - IT'S TIME TO GRILL!!!

Maple Old Fashioned

Being originally from Wisconsin, there are a few things that come standard in the blood and one of them is the knowledge of the Old Fashioned.  This is my shout out to Memorial Day Weekend, where I will be on my way to Sconnie, the place where I believe the Old Fashioned was born.

Flour Tostada Tacos

You will all be getting this a little late, but this was our tribute to Cinco de Mayo at our house.  I made a poor attempt at homemade refried beans.  And by poor attempt, I really mean that they stunk.  The flavor was there, but I didn't get the right texture for this - so, what this means is that I will be trying them again.

Sauteed Brussel Sprouts

Growing up, my father had an amazing green thumb and we had what I believed to be the worlds largest home garden.  I'm sure it is not the largest personal garden in the world, but it was certainly admirable.  My dad grew the food, my mom canned and us kids just grabbed pea pods off the vine and carrots out of the ground to hose them off and have as a snack while we were running around.

Strawberry Triffle

I'm going to start out with saying that there are about a thousand different ways that you can make a trifle - and would bet that about 90% of them are delicious!!!  This one absolutely falls in that 90%.

Asian Pork Meatballs

There are many things that go into this four bite treat of a meatball and all of them are delicious!!!  For some reason lately, I've been craving the hot zig of Asian foods.  This meatball totally hit the spot on that.

Mediterranean Spiced Eggs with Puff Pastry

Breakfasts on the weekend can be a great time to create something new and fun.  I cannot take credit for this dish since the significant other had reign of the kitchen on this particular morning.

Chicken Pot Pie

I know that I have said it before, but there is a certain satisfaction that comes from making a really good recipe for your family.  Especially when that recipe is comfort food related and you haven't made it before.

Caprese Frittata

One thing that always happens when I visit my family is that we whip up great breakfasts on the weekends.  I mean all out kind of breakfasts that are awesome when feeding a large group of hungry people.  Pancakes with bacon, cream cheese or berry Kringle's, breakfast burritos, eggs - in many different ways - scrambled, Benedict, egg bake, and well, this list could go on and on.

White Wine Pear Sangria

I am a fan of wine...pretty much in all forms, except blush.  I like the light fruitiness of a savinogn blanc as much as I like the dark pepper cherry of a Zinfandel.  Which means, I also like it when we can have fun with wine and mix it this case, making a sangria.

Baked Cod with Artichokes

There are some days that the only thing that sounds good is a dish that is filling, but really light and refreshing.  That day for me was the day after Christmas.  After all of the wonderful rich food of the holidays, I was seriously craving something simple and healthy.
